The kids ate spinach- and loved it! Yay!


My kids loved this stuff- I had to limit them to thirds so Enoch could have some when he got home (he was working late last night).

You mix:
10 oz frozen chopped spinach, thawed with juices squeezed out (I chop it up some more too)
15 oz ricotta
1 egg
1/2 cup mozzerella
1/4 cup parmesan
some oregano and pepper

Boil 8 lasagna noodles, spread cheese mixture on each noodle then roll up from short end

Place bundles in greased 8 by 13 pan

Cover with jar of alfredo sauce, then cover with foil

Bake at 375 for 45 minutes

Uncover, cover with sliced tomatoes, bake for 5-8 more minutes

Sounds delicious! i can't wait to try it. I wonder if it will get my husband to eat spinach as well!
