Our neighbor, Xiomara, is known for having the best empanadas at her roadside stand. We have to admit they are pretty dang good. The ones filled with chicken are my favorite. This picture is making me hungry. They are made of corn meal stuffed with potatoes or meat, and then deep fried. They cost 35cents.
